Mobile Food Pantry Project

I am putting together a pilot intervention for mobile food pantries, “A Brief Nutritional Intervention to Improve Dietary Knowledge and Behaviors in Mobile Food Pantry Clients”. Basically it will promote eating a few meatless meals weekly using ingredients found in food pantries (especially canned veggies), to save grocery costs and improve health through eating less meat. I am working with the local food bank (River Bend Foodbank). I was unable to obtain much funding, so I am challenged by trying to do the intervention on a shoe string.
I found the IRB approval process very interesting (and involving many revisions). Protecting a vulnerable group was much more involved than I anticipated.
